Hooter's Buffalo Chicken Wings Recipe
Ingredients:
Vegetable oil -- for frying
1/4 cup butter
1/4 cup Crystal Louisiana Hot Sauce
1 dash ground pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wing pieces
Blue cheese dressing
Celery sticks
Cooking Directions:
Heat oil in a deep fryer to 375 degrees.
You want just enough oil to cover the wings entirely -- an inch or so deep at least.
Combine the butter, hot sauce, ground pepper, and garlic powder in a small saucepan over low heat.
Heat until the butter is melted and the ingredients are well-blended.
Combine the flour, paprika, cayenne powder, and salt in a small bowl.
If the wings are frozen, be sure to defrost and dry them.
Put the wings in a large bowl and sprinkle the flour mixture over them, coating each wing evenly.
Put the wings in the refrigerator 60 to 90 minutes.
This will help the breading to stick to the wings when fried.
Put all the wings in the hot oil and fry 10 to 15 minutes or until some parts of the wings begin to turn dark brown.
Remove from the oil to a paper towel to drain.
Don't let them sit too long, because you want to serve them hot.
Quickly put the wings in a large bowl.
Add the hot sauce and stir, coating all of the wings evenly.
Serve with blue cheese dressing and celery sticks on the side.

You totally forgot the cornstarch!! They are battered with two parts flour to one part cornstartch! If you don't have the cornstartch then you have nothing but mush when you put on the sauce! Enjoy
Mine are always crispy. The best. I make these all the time for get togethers. As written is perrrr-fect.
I agree - as written is perfect. This is my family's most requested dinner and the kid's friends will come over if they hear I'm making wings. But the secret is to chill the seasoned wings for at least 2 hours before frying. And make sure they cook at least 15 minutes - no less.
i like chicken it is really good!!!! but i have never made this or ever been to hooters!!!! just saying!

Wings are really good! I added extra cayann pepper and they were really hot. Not as breaded as Hooters, I might try it with cornstarch to see if becomes thicker.
I used peanut oil instead of vegetable and the results were excellent. Next time I'm doubling the recipe so we'll have more leftovers!!!

do you really have to put cornstarch? or do you just put it in the fridge for a while for the breaded part to be like hooters?

I fry mine in a 2 or 3 qt sauce pan filled half way with oil,about 3-4 wings at a time,don't crowd them. That way you don't use alot of oil, only takes a few minutes per batch.While they rest on paper towels,then when all are fried I toss them in the sauce. They always come out great!!!
I made these wings exactly as this recipe was written and they were outstanding! I've tried other wings recipes but the fussy men in my family were never happy. They absolutely LOVE these wings. I've cooked them in a fry pan in the past and they were good, but after using the deep fryer I received for Xmas, I'm convinced they are better than ever. Good luck to all of you!
No need for cornstarch. If you want thick breading like Hooters, put the egg soaked wings in the flour and squeeze with your hand.. that does it.
